The Everyday Chef's Knife
The Everyday Chef's Knife
Designed by Chef Ona Lee in collaboration with Grakka Metalworks
$365 | Shipping included
Limited release of only 6 knives
Each knife is handmade to order. Please allow approximately 4 weeks for production before shipping.
I designed this knife around the way I actually cook.
I love making meals from scratch, but like most people, I don't have unlimited time to spend in the kitchen. I wanted an exceptionally well-made knife that could take me through nearly every stage of preparing dinner without constantly stopping to switch tools. And I figured if that was something I wanted, there were probably plenty of other people who wanted it too.
From breaking down a chicken and preparing cuts of meat to chopping vegetables, finely cutting herbs, and slicing the finished roast, every part of this knife was designed with a purpose.
The blade draws inspiration from two traditional Japanese knife designs. The back half is substantially thicker than a standard chef's knife, providing strength and stability for working around bones and joints. Moving toward the tip, the blade becomes finer and more precise, allowing for delicate cuts and detailed work.
This isn't a knife intended to replace every specialized tool in the kitchen. There will always be jobs better suited to a dedicated boning knife, fillet knife, or slicer. But in my own kitchen, I rarely need more than one or two knives to prepare an entire meal, and I wanted to make a knife that reflected that.
Handmade by Grace of Grakka Metalworks using high carbon steel and reclaimed hardwood, this is a knife intended to be used, cared for, and enjoyed for years to come.
From the first cut to the last.

Care and Maintenance
This knife is made from 1084 high carbon steel, not stainless steel. With use, the blade will naturally develop a patina, changing in color and character over time. This is normal, and one of my favorite things about carbon steel knives. Over the years, that patina becomes a record of the meals you've prepared and the way you work in your kitchen. No two will develop quite the same way. The knife becomes distinctly yours, shaped by years of use and care.
Hand wash only. Never put it in the dishwasher.
Dry thoroughly immediately after washing.
Rinse and dry promptly after cutting acidic ingredients such as lemons and tomatoes.
Apply a thin coat of food safe oil to the blade when needed, particularly before extended storage.
Condition the hardwood handle occasionally with a suitable wood cream or salve.
Store clean and dry.
Carbon steel can rust if neglected, but with simple care it develops a beautiful patina and becomes a familiar, hardworking part of your kitchen.
A detailed care sheet is included with every knife.
Ordering and Production
Each release is limited to just six knives, individually handmade to order by Grace of Grakka Metalworks.
Please allow approximately four weeks for your knife to be made, followed by shipping time. Because each knife is made by hand using reclaimed hardwood, natural variations in the wood grain and appearance are to be expected.
Price: $365, includes shipping within the United States.
