The Everyday Paring Knife

Designed by Chef Ona Lee in collaboration with Grakka Metalworks

$165 | Shipping included within the United States

Limited release of only 6 knives

Each knife is handmade to order. Please allow approximately 4 weeks for production before shipping.

This knife is based on a little French paring knife I bought at Korin in New York City when I was a young line cook at The Spotted Pig.

I loved that knife. With it, I cored what felt like a million cherry tomatoes and strawberries, tournéd an infinite number of carrots and potatoes, and tackled just about every little job that called for something smaller and more precise than a chef's knife.

When my chef de cuisine left the restaurant, I gave it to him. I never managed to find another knife quite like it.

So, years later, I asked Grace of Grakka Metalworks to make me one.

This is a small, hardworking knife designed for all the little tasks that a larger knife isn't particularly well suited for. Coring, peeling, trimming, shaping vegetables, and all the other detailed work that happens in the kitchen.

I designed it as a companion to my Everyday Chef's Knife. Between the two, you can tackle nearly every stage of preparing a meal, from the bigger jobs to the smallest finishing details.

Handmade by Grace using high carbon steel and reclaimed hardwood, this is a simple, beautiful tool intended to be used, cared for, and enjoyed for years to come.

From the first cut to the last.

Care and Maintenance

This knife is made from 1084 high carbon steel, not stainless steel. With use, the blade will naturally develop a patina, changing in color and character over time. This is normal, and one of my favorite things about carbon steel knives.

Over the years, that patina becomes a record of the meals you've prepared and the way you work in your kitchen. No two will develop quite the same way. The knife becomes distinctly yours, shaped by years of use and care.

  • Hand wash only. Never put it in the dishwasher.

  • Dry thoroughly immediately after washing.

  • Rinse and dry promptly after cutting acidic ingredients such as lemons and tomatoes.

  • Apply a thin coat of food safe oil to the blade when needed, particularly before extended storage.

  • Condition the hardwood handle occasionally with a suitable wood cream or salve.

  • Store clean and dry.

Carbon steel can rust if neglected, but with simple care it develops a beautiful patina and becomes a familiar, hardworking part of your kitchen.

A detailed care sheet is included with every knife.

Ordering and Production

Each release is limited to just six knives, individually handmade to order by Grace of Grakka Metalworks.

Please allow approximately four weeks for your knife to be made, followed by shipping time. Because each knife is made by hand using reclaimed hardwood, natural variations in the wood grain and appearance are to be expected.

Price: $165, including shipping within the United States.
